How was your Father's Day? We planned to have a picnic in the park, but my folks surprised us with a new electric lawn mower, so we plopped down on the freshly cut grass and enjoyed a picnic in our backyard instead.
I adapted these pretty purple wraps for simplicity, substituting a few ingredients here and there. Whether you're into beets or not, they're quite tasty! I placed the following mixture into whole wheat tortillas, topped with a large salad leaf, and rolled them up burrito style.
1 can of beets
1 10-ounce log of goat cheese
1 cup of cooked quinoa
1 handful of roasted pumpkin seeds
1 handful of dried cranberries
5 tablespoons of olive oil
Salt, pepper, cinnamon and chopped fresh basil to taste
I told my family they were secret wraps, so they'd be surprised by the bright purple bite.
