One good thing about having a baked potato bar is the absurd amount of leftovers. What does this mean? To me, it means fancy grilled cheese sandwiches. Last night, I made a delicious one with goat cheese, pesto, roasted red pepper sauce, sun-dried tomatoes and avocado. Next, I plan to make one with brie and pomegranate seeds.
