I've decided that all Italian restaurants should have a mozzarella bar. The one I went to was at Osteria Mozza in Los Angeles. My 3 book club besties ate there in honor of our most recent novel, HEAT, written by an apprentice of the famed chef, Mario Batali, who owns the joint.
I would have died happy if all I ordered was from the bar that prepares fancy fresh mozzarella, burrata, bocconcini and stracciatella. The dish we shared as an appetizer was the burricotta: fluffy ricotta cheese inside a soft mozzarella shell, served on toast with radicchio, spiced walnuts, and honey fried rosemary. Drooling yet?
